YUMMY!!!!

So when I have the time, I really like to cook....bake....whatever really. During the week though, Mark and I tag team our dinners and we've really grown to love cooking together. Well this past week we made a killer dinner. For those of you looking for new recipes, if you like to grill - try this!!!

We did the marinade for 3 days in the fridge and then grilled the chicken and I didn't have lime juice so I did lemon juice instead. YUM!!!

SUMMERTIME CHICKEN TACOS
1/3 cup olive oil
1/4 cup lime juice
4 garlic cloves, minced
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt, optional
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (1-1/4 pounds)
6 flour tortillas (8 inches) or taco shells, warmed
Toppings of your choice
Directions:
In a large resealable plastic bag or shallow glass container, combine the first eight ingredients. Add chicken and turn to coat. Seal or cover and refrigerate 8 hours or overnight, turning occasionally. Drain and discard marinade. Grill chicken, uncovered, over medium heat for 5-7 minutes on each side or until juices run clear. Cut into thin strips; serve in tortilla or taco shells with desired toppings. Yield: 6 servings.

I am a huge Taste of Home fan - you can pick what cuisine you want, how long you want to spend on it, and you can pick if you want it to have low carbs, low fat, etc. Then it tells you the nutrition facts on most of them.
